Tuber Magnatum, more commonly known as Alba truffles, or white truffles are one of the most exotic and esteemed delicacies on earth. White truffles can be found through out certain regions in northern Italy, where the season generally begins in October, and usually ends sometime in late December or early January. When fresh, the �nose�, or perfume of Alba truffles is incredibly strong, and is a piercing, unforgettable aroma. Although the white truffle�s flavor is not that of a perigord truffle, many consider its aroma far superior. White truffles are to be shaved very thinly over certain dishes that are hot, enhancing the aroma of the truffle for the lucky diner�s pleasure. Folded into and shaved over a risotto or pasta with cream sauce is just heavenly.

Perigord Truffles - Tuber Melanosporum

Tuber melanosporum, more commonly referred to as the perigord truffle, or black diamond, is a highly regarded truffle species. Although named after the Perigord region in France, these truffles are harvested through out Europe, most commonly in France, Spain, and Italy, and are usually harvested between December and March. When ripe, perigords should have a very dark, almost black inner flesh, and an intense aroma. The flavor and aroma of a perigord is extremely rich, robust, earthy, and chocolaty. Although their perfume is not as strong as the all mighty alba truffle, the flavor is known to be the greatest of any truffle species. Perigord truffles are extremely versatile and are a wonderful addition to any dish with the proper presentation and preparation.

Burgundy truffles have a wonderful earthy aroma reminiscent of hazel nuts, and are usually harvested from September to December across Europe. They are usually quite large and have a rough, dark outer layer, and when fresh, the interior should be rich brown in color. Known for their intense gastronomic qualities, burgundy truffles are often used in the creation of assorted truffle products including salts, butters, and other similar items. They are often bottled or canned, and are distributed more than any other truffle species. Burgundy�s are often paired with proteins, as well as pasta and rice dishes.
